A keto recipe once again; this time it is a Keto Lemon Chicken. A keto diet is well known for being a really low carb diet, where the body produces ketones in the liver to be used as energy. It’s referred to as low carb high fat (LCHF) diet and there are many who have made it their lifestyle. Keto Lemon Chicken is an easy low carb recipe that is a marvellous one pot meal. It’s a great recipe even if you’re not on a keto diet.
Keto Lemon Chicken is an easy tender chicken with the creamy cheesy lemon butter sauce ever. The idea for this Keto Lemon Chicken is from the Headbangers Kitchen but I added mushroom and broccoli to the pot meal. The king, the queen, and flavour of this dish is the lemon.
Recipe for Keto Lemon Chicken
150 gms Boneless Chicken thighs cubed
2 tbsp Grated Mozzarella or Cheddar Cheese
1 lemon juice
2 tbsp Cream
½ Tsp pepper
1 tsp Mixed Herbs…Thyme, Oregano, Basil
¼ Tsp chilli flakes
2 tbsp butter
50 gms broccoli chopped fine
50 gms mushroom sliced finely
Season the chicken on both sides with the salt, pepper and lemon seasoning.
Heat 1 tbsp butter in a skillet
Fry chicken on both sides for 3-4 minutes until golden brown. Add the mixed herbs and the chilli flakes and stir nicely.
Deglaze the pan with water. Remove chicken from fire and set aside.
In the same pan heat one tbsp butter and sauté the broccoli and butter for a couple of minutes. Add one cup water and let it cook till done. Add the lemon wedges to the water to give the veggies a lemony flavour.
Add the chicken to the veggie broth. Add salt.
Sprinkle the grated cheese and cream on the chicken.
Mix well. Once the chicken is done and creamy, remove from fire and garnish with fresh coriander.
Serve this Keto Lemon Chicken hot and relish the assorted flavours bursting in your mouth.
