You must be wondering why I am talking of chicken when I don’t even eat it. The daughter or my princess is home after a long time and staying home for a month (which is a lot, according to her) and is on a low glycemic diet which excludes carbs completely. I have to dish out wholesome, filling meals full of lean protein for her every day. My simple, easy peasy chicken recipe is good to eat for anybody, diet or no diet. Master the art of cooking chicken breasts right and there is no end to the delectable dishes you can prepare.

Marinating and tenderising the chicken breasts is a dish half done. It ensures that the chicken is loaded with juices, and is moist and juicy.  Easy  Sauteed Chicken Breast Recipe

Easy  Sauteed Chicken Breast Recipe

Ingredients:

4 pieces Chicken breasts cut into cubes

1 tsp ginger-garlic coarse paste

2 onions chopped

Salt to taste

1  slit green chilli

Pinch of paprika

Pinch of pepper

Juice of 1 lemon

2 tbsp Olive Oil

2 tbsps Greek Yoghurt.

Method

Marinate the chicken breasts for 15 minutes with the salt, pepper, lemon juice and 1 tsp olive oil.

In a pan add the olive oil and sauté the coarse ginger-garlic paste till pink.

Add the chopped onions and sauté.

Add the marinated chicken along with the juices and cook until nice and tender.

We Indians like our food a little spicy so I added a little paprika.

Once the chicken is done, transfer to a serving bowl and drizzle some whipped yoghurt over it. If you are not counting your calories then you can add fresh cream but then I have found that Greek yoghurt gives the same velvety texture of cream for a fraction of the calories.

Garnish with fresh coriander leaves and serve.

My chica made a meal of the Easy Sauteed Chicken Breast Recipe and a glass of mint-coriander flavoured buttermilk but you can serve it with bread or roti.
