Double Chocolate Muffins

I am sure 99% of people the world over drool over chocolate and I am one of them! Very few other foods create a passion and craving like  chocolate. I am a true blue Chocoholic and am proud to say so. When I was a little girl in pigtails, chocolate was a luxury I could indulge in rarely as we could ill afford it but the craving and desire was always there.

In the few months of courtship that we had my then fiancé and later husband, indulged my choco passion to the utmost. Every time we met he would unload his pockets full of chocolates which lasted till we met again. I do not have a sweet tooth as such but I surely have a chocolate tooth; be it chocolate bars, or Baskin Robins’ double scoop of Bavarian chocolate flavored ice cream in a waffle topped with hot fudge or a chocolate cake and these days chocolate stone ice cream with toppings of Ferrero rocher’s chocolates and a generous helping of chocolate sprinklers is my poison!

A bar of chocolate can tame the wildest vixen am sure. Just a few grams of chocolate and the mood goes mmmmmmmmm. Why do we feel good after eating chocolate? Well!! Chocolate contains around 300 chemicals which when put together result in a feel good mood.A small quantity of caffeine, a sprinkling of stimulants like Theobromine and Phenylethylamine, increase the activity of neurotransmitters which trigger off a temporary feeling of well-being. In simple terms, chocolate is as addictive as any drug! So control your longings and do not binge on chocolate rather than savor it bit by bit every time you raid the freezer (like I do)

Dark chocolate contains less sugar than other chocolates; it contains lots of antioxidants that help the cardiovascular system by reducing blood pressure. Eating dark chocolate widens arteries and promotes healthy blood flow .Eating dark chocolate every day reduces the risk of heart disease by one-third.

Flavonoids found in cocoa products have antioxidant, anti-inflammatory, anti-clotting effects that can reduce the risk of diabetes by improving insulin sensitivity. The smell of chocolate increases theta brain waves, that actually make you relax. As chocolate contains high doses of caffeine and sugar, it is largely to blame for ADHD (Attention Deficit Hyperactivity Disorder) in children these days.

P.S: Chocolate can cause headaches and is not recommended in large doses for people who suffer from migraines. (I try not to overeat because of this!)

Baking is not my forte and I indulge in it very rarely. Chocolate muffins are yummy but these double chocolate muffins are irresistible.I baked these with the help of Rohini, my young friend who has a good hand at baking. The moulds and the cooking chocolate were sent with love from halfway across the world by Bhavna (Australia).

It is quite an easy and simple recipe and tastes divine!

Double Chocolate Muffins 


Makes 12 small muffins
* 15 gms cocoa powder
* 70 gms flour
* 3/4 – 1 tsp baking powder
* 25 gms sugar
* 85 gms cooking chocolate chopped (you can also use chocolate chips)
* 1 egg
* 3 tbsp milk
* 40 gms lightly salted butter

1. Preheat the oven to 190 degrees C and line your muffin cups with butter paper if they are not silicon.
2. Sift the cocoa powder, flour, and baking powder into a mixing bowl. Stir in the sugar and chocolate chunks. In a separate mixing bowl, beat together the egg, milk and butter with a fork until they are well combined.
3. Tip the egg mixture into the flour. Using a dessert spoon gently fold the ingredients together until only just mixed. (Don’t over blend the ingredients or the muffin won’t be as light as it should be)
4. Spoon the mixture into the paper cases or silicon moulds; it should be level with the top of the tin. Bake in the preheated oven for 15 minutes, or until risen and just firm to the touch. Leave the muffins to cool for 2 minutes and then transfer to a wire rack (very important)

Dust some icing sugar on it after it cools down. I like to eat these Double Chocolate Muffins  warm out of the oven with the crunchy chocolate chunks and topped with some fresh cream or vanilla ice cream. Or use your own favorite way of serving warm, cold or with any topping.
