Easy Cooking Ideas for Singles # 48- Ribbon Sandwich

Ribbon sandwiches are an Indianised version of the soft, dainty butter or cheese sandwiches of the English. Easy to make and good to eat, these ribbon sandwiches make a tasty treat. Punjabis love their pudina (mint dip)chutney and must have incorporated it into the sandwich to cater to the spicier palate of the hot north Indian.It was on my daughter’s  2 nd birthday when my sisters in law and I planned a party and to make it colorful and attractive arranged the sandwiches like a cottage.The kids loved them and polished them off within no time. Now after 20yrs when I was teaching cooking to a Junior master chef in the making I recalled these sandwiches and made them again.Memories!!

Ingredients:

Ribbon Sandwich

Sandwich bread

Green Mint-Coriander chutney

Butter

Tomato sauce

Grated carrot for garnishing

Method:Spread the green chutney on one slice and place a buttered one on top of it. Then apply sauce on this slice and place another slice of bread on it. 4 slices in all make a sandwich. Cut the edges of the bread and diagonally across so that it is triangle in shape. Arrange on a plate like a hut and on the sloping roof add butter and spread the grated carrot to look like red roof tiles. Tuck a soup stick or a bread end or a choco-stick on top like a chimney. Use toothpicks to hold the sandwiches in place. Surround the cottage with chips or green fries.
