Why do I say Egg Fried Rice Indian Style? Because the authentic Chinese is nothing close to what we make in India. We eat rice every day and there is leftover rice many a time and what better way to use it again. Chinese fried rice is made with slightly uncooked rice, placed in the refrigerator for a few hours as it gives you a rice dish with every grain of rice intact hence non-sticky.
Rice is the staple diet in South India. I grew up eating it at least twice a day. South Indian cuisine has rice as an accompaniment for every pickle, curry, dal and last but not the least yoghurt. We Punjabis love our Rajma-Chawal ( Kidney beans and rice) and Kadhi-Chawal ( Tempered yoghurt with fritters and rice) I can eat rice any time of the day (I do not anymore as I am cutting down on my carbs) and left-over rice is always used to make a yummier new dish. I make tomato rice, lemon rice, mango rice (I have a couple of mangoes on my small tree, maybe I will make the mango rice soon) yoghurt rice and fried rice. When my daughter was home recently she asked me to give her a light dinner. I went into the kitchen and checked out the fridge and pantry; I found some leftover rice and veggies in the fridge. But why egg fried rice? It is a one pot meal and other than ketchup you do not need any other accompaniment.
Cooking for others is such a pleasure, especially your kids. Mother’s cooking is said to be the tastiest love is her best ingredient in every recipe. I love cooking but when it comes to cooking for me, I would rather eat bread and eggs than cook a proper meal. Kids grow up and fly the nest but when they come home it is one long feast.
There are two ways of making egg fried rice; one is to scramble the eggs with the veggies and another is to make a thick omelette, cut strips and garnish the fried rice with it. I make both but today I am sharing the recipe for the first method. We Punjabis love pepper and use it in most dishes. I sprinkle it on the fried rice too It is proved that black pepper stimulates the taste buds in such a way that an alert is sent to the stomach to increase hydrochloric acid secretion, thereby improving digestion. It is safe and can be given to infants too.
Recipe for Egg Fried Rice Indian Style
2 cups cooked rice
2 carrots chopped finely
10 French or string beans chopped finely
1 bunch spring onion greens
5 cloves garlic crushed
2 eggs beaten
1 tbsp Olive oil
1 tsp Vinegar
1 tsp soya sauce
Pinch of pepper powder
Chilli Sauce & Ketchup to Taste
Salt to taste
Heat oil in a wok and add the crushed garlic, sauté till pink and stir in the chopped carrot and beans and sauté. Add the pepper powder, then the beaten eggs and stir continuously to get a scrambled mixture. You can add green peas too if you like. Add the salt, vinegar, soy sauce and the rice. The vinegar gives a nice tangy taste and the veggies too, retain their colour because of it. Mix well till rice is nice and hot. Garnish with spring onion and serve.
